Cool Swamp Salad

 

It's an easy and quick recipe for a healthy Brunch, Lunch or Dinner Salad. Enjoy the refreshing and hydrating taste of the cucumber and Alfalfa sprout mix. It's a perfect dish for those HOT, weather hungers C:

INGREDIENTS: 

Rinse all your veggies C:

  • 1 Cucumber
  • 1 Red Onion - Cut thin Slices 
  • 1/2 Lemon - Cut thin Slices (Enjoy the skin and all) 
  • 1 or 2 Red & Orange, Baby Bell Pepper
  • 1 Pack Alfalfa Sprout

[Soak Sprouts in water 3-5 min to rinse / Drain and squeeze liquid out]

  • 2 Tablespoon -Pistachio Oil (Optional choice)
  • Grounded black pepper 
  • Dash of Champagne Pomegranate Vinaigrette (Optional Vinaigrette)   

Spice up with...

  • 1/2 Teaspoon of Carol's Salt
  • Sprinkle Fennel, Cloves, Star Anise Spices

*Additional Ingredient Idea:

  • Avocado 
  • Tomato

1. Cut vegetables into desired size or use a Veggie Spiralizer to perfect

2. Combine all ingredients in large mixing bowl

3. Toss up the salad till the veggies are evenly dressed and looking Swampy! 

3. Serve in bowl and ENJOY!
